These gluten-free cheese and onion scones are a favourite of ours, so I regularly bake them. The smell of them cooking fills the house with a delicious aroma. These gluten-free cheese and onion scones are just fabulous. They are quick and easy to make and we often have them for breakfasts, lunches or as a snack.
Rub the butter into the gluten-free flour so that it looks like breadcrumbs.
Next add the baking powder, salt and pepper, grated cheese and finely chopped spring onion.
Now beat an egg in a measuring jug and add 1/4 pint of milk, mix well.
Add the egg and milk to the flour and mix with a fork.
Turn the dough out onto a floured worktop. I tend to use my hands to gently flatten the dough and cut out the scones with a round dough cutter about 10cm thick.
Put onto a greased baking tin and bake for 15 minutes until brown.
Remove and put onto a cooling rack before devouring.
