  • 225 g Gluten-free self-raising flour
  • A pinch of salt
  • 110 g Butter
  • 110 g Castor sugar
  • 170 g Mixed luxury dried fruit
  • 2 Medium eggs
  • 2 tbsp Milk

Instructions
 

  • Mix the flour and the salt and rub in the butter until it has the consistency of breadcrumbs.
  • Stir the in sugar and the fruit.
  • Beat the eggs together with the milk.
  • Add to the flour and mix it well to form a soft dough.
  • Put the mixture into a greased 7-inch cake tin.
  • Bake 180℃ (Gas 4) for 50 minutes.
