7-Inch cake tin
- 225 g Gluten-free self-raising flour
- A pinch of salt
- 110 g Butter
- 110 g Castor sugar
- 170 g Mixed luxury dried fruit
- 2 Medium eggs
- 2 tbsp Milk
Mix the flour and the salt and rub in the butter until it has the consistency of breadcrumbs.
Stir the in sugar and the fruit.
Beat the eggs together with the milk.
Add to the flour and mix it well to form a soft dough.
Put the mixture into a greased 7-inch cake tin.
Bake 180℃ (Gas 4) for 50 minutes.
