These gluten free banana fritters are based on the humble pancake batter. Very yummy and easy to make.

- 250 g Gluten-free self-raising flour (9 oz)
- 2 Free range eggs
- 350 ml Water (13 fl oz)
- 100 ml Milk (3 fl oz)
- 1 Large ripe banana
- 1 tbsp Desiccated coconut
- Fresh berries and maple syrup to serve
Mix the flour, beaten eggs, water, and milk until you have a smooth batter.
Gather your fillings together.
Heat a small amount of oil in a frying pan, then gently pour in the required amount of batter depending on whether you want a large or small fritter.
Add the desiccated coconut so it can cook with the batter.
Once the fritter is cooked on each side (it should be brown and crispy) pop it onto a plate.
Add whatever topping you wish and enjoy.
