Ingredients
 
 

  • 250 g Gluten-free self-raising flour (9 oz)
  • 2 Free range eggs
  • 350 ml Water (13 fl oz)
  • 100 ml Milk (3 fl oz)
  • 1 Large ripe banana
  • 1 tbsp Desiccated coconut
  • Fresh berries and maple syrup to serve

Instructions
 

  • Mix the flour, beaten eggs, water, and milk until you have a smooth batter.
  • Gather your fillings together.
  • Heat a small amount of oil in a frying pan, then gently pour in the required amount of batter depending on whether you want a large or small fritter.
  • Add the desiccated coconut so it can cook with the batter.
  • Once the fritter is cooked on each side (it should be brown and crispy) pop it onto a plate.
  • Add whatever topping you wish and enjoy.
