Gluten-free lamb kofta kebabs are an absolute winner when you want something tasty, easy, and full of lovely flavours.

- 900 g Minced lamb
- 1/2 Onion, very finely chopped
- 2 Garlice cloves crushed
- 1/2 Preserved lemon or (juice and zest of 1/2 lemon)
- 1 Egg (beaten )
- 2 tsp Ras El Hanout spice mix or 1/4 tsp each of ground allspice,cinnamon & nutmeg
- 1 tsp Ground cumin
- 1 tsp Sumac
- 1 tsp Salt
- 1/4 tsp Freshly ground black pepper
- 2 tbsp Finely chopped fresh parsley
In a large bowl, combine all ingredients and mix thoroughly until well combined.
Shape the mixture into long sausage-like koftas or oval patties around skewers.
Grill or broil over medium-high heat for about 5-7 minutes per side, until cooked through and nicely charred.
Serve with gluten-free flatbread, fresh salad, and a cooling yoghurt or tahini sauce.
