Equipment

  • Sharp Knife

  • Garlic Crusher
  • Table Spoon
  • Citrus squeezer
  • Wooden skewers

Ingredients
 
 

  • 900 g Minced lamb
  • 1/2 Onion, very finely chopped
  • 2 Garlice cloves crushed
  • 1/2 Preserved lemon or (juice and zest of 1/2 lemon)
  • 1 Egg (beaten )
  • 2 tsp Ras El Hanout spice mix or 1/4 tsp each of ground allspice,cinnamon & nutmeg
  • 1 tsp Ground cumin
  • 1 tsp Sumac
  • 1 tsp Salt
  • 1/4 tsp Freshly ground black pepper
  • 2 tbsp Finely chopped fresh parsley

Instructions
 

  • In a large bowl, combine all ingredients and mix thoroughly until well combined.
  • Shape the mixture into long sausage-like koftas or oval patties around skewers.
  • Grill or broil over medium-high heat for about 5-7 minutes per side, until cooked through and nicely charred.
  • Serve with gluten-free flatbread, fresh salad, and a cooling yoghurt or tahini sauce.
