No-Fuss Gluten-Free Beef Curry

This gluten-free beef curry features succulent grass-fed beef, soft sweet potatoes and a spicy tomato sauce - what a delicious combination!

- 500 g Grass-fed beef
- 1 Large onion
- 1 Large red pepper
- 1 Large sweet potato
- 400 g Can of tomato
- 1 tbsp Tomato puree
- 2 tbsp Curry paste ( I use Patak's Rogan Josh)
- 300 ml Boiling water
Cut the beef and the red pepper into bite-sized pieces. Finely chop the onion. Peel and chop the sweet potato into bite-sized pieces.
Put the sweet potato into a saucepan of boiling water and cook until soft. This takes about 10 minutes.
Fry the beef on medium heat for about 8 minutes or until browned.
Add the onion and red pepper and continue to fry for a further 5 minutes.
Add the tin of tomatoes, tomato puree, curry paste, and boiling water and stir thoroughly. Simmer for about 20 minutes stirring occasionally.
Add the sweet potato to the curry just before you serve.
Serve with rice or naan bread.
