No-Fuss Gluten-Free Beef Curry

Equipment

Ingredients
 
 

  • 500 g Grass-fed beef
  • 1 Large onion
  • 1 Large red pepper
  • 1 Large sweet potato
  • 400 g Can of tomato
  • 1 tbsp Tomato puree
  • 2 tbsp Curry paste ( I use Patak's Rogan Josh)
  • 300 ml Boiling water

Instructions
 

  • Cut the beef and the red pepper into bite-sized pieces. Finely chop the onion. Peel and chop the sweet potato into bite-sized pieces.
  • Put the sweet potato into a saucepan of boiling water and cook until soft. This takes about 10 minutes.
  • Fry the beef on medium heat for about 8 minutes or until browned.
  • Add the onion and red pepper and continue to fry for a further 5 minutes.
  • Add the tin of tomatoes, tomato puree, curry paste, and boiling water and stir thoroughly. Simmer for about 20 minutes stirring occasionally.
  • Add the sweet potato to the curry just before you serve.
  • Serve with rice or naan bread.
