These gluten-free cheese bites are super easy to make, tasty and versatile. I have used them as an appetiser on their own or with dips. Pop them in a lunch box or as a late-night snack

Ingredients
 
 

  • 225 g Plain Gluten-Free Flour
  • 50 g Butter
  • 60 g Grated Cheddar Cheese
  • Pinch Salt
  • 1 tsp Italian herbs or chilli flakes
  • 1 Beaten Egg
  • 1/4 Pint Milk

Instructions
 

  • Rub the butter into the flour (like breadcrumbs).
  • Add the grated cheese, Italian herbs or chilli and a pinch of salt
  • Mix in the beaten egg followed by the milk.
  • Bring the mixture together with your hands. Add more flour if it is too sticky.
  • Make the mixture into a ball then gently flatten until the dough is about 3cm thick.
  • Cut out your bites with the pastry cutter and put onto the baking tray.
  • Bake in the oven at Gas 6 (200℃) for 15 minutes. Leave to cool.
