This gluten free courgette slice is a great alternative to a quiche. It is delicious hot or cold and can be made with meat or without. It is very easy to make, quick and cheap too. What's not to love about this versatile meal?

2-3 Courgettes grated 1 Large onion 3 Rashers of bacon 125 g Grated cheddar cheese (4.5 ounces) 125 g Gluten-free flour (4.5 ounces) 50 ml Rapeseed oil (2 fl oz) 4 Medium eggs 1 tsp Italian herbs 1 Pinch of salt and pepper
Grate the courgettes and put them into a large mixing bowl.
Grate or finely chop the onion and add to the courgettes.
Chop up the bacon and add it to the mixture.
Add in the grated cheese, flour, herbs, salt, and pepper.
Beat the eggs together with the oil and mix well with the dry ingredients.
Put the mixture into a well-greased flan tray.
Bake for 40-45 minutes on gas 6 or 200c.
