Gluten-Free Feta Cheese Salad

My gluten-free feta cheese salad is one of those dishes I just can’t get enough of – simple, fresh, and bursting with flavour.

Equipment

  • Chopping Board
  • Sharp Knife
  • Serving bowl
  • Tea Spoon

Ingredients
  

  • 200 g Feta cheese
  • 2 little gem lettuce 
  • 150 g Baby plum tomatoes
  • 1/4 Small red onion
  • 1/2 Small cucumber
  • 10 Olives
  • 5 Sundried tomatoes
  • 2 tbsp fresh lemon juice (about 1 large lemon)
  • Zest of 1 lemon
  • 2 tbsp Red wine vinegar
  • 2 Cloves Garlic, peeled and crushed
  • 1 tbsp Granulated sugar
  • 1 tsp Dried basil
  • 1 tsp Dried Oregano
  • 2 tbsp Extra virgin olive oil

Instructions
 

  • Chop the feta cheese into bite-sized pieces.
  • Wash the lettuce, tomatoes and cucumber.
  • Finley chop the red onion and the lettuce.
  • Half the baby tomatoes and chop the cucumber into small pieces.
  • Line your salad bowl with the chopped lettuce and red onion.
  • Add all the other ingredients, olives, baby tomatoes, sundried tomatoes and herbs.
  • Drizzle the olive oil and the black pepper to complete your delicious salad
  • Serve immediately with some crusty gluten-free bread.
