Gluten-Free Feta Cheese Salad

My gluten-free feta cheese salad is one of those dishes I just can’t get enough of – simple, fresh, and bursting with flavour.

- 200 g Feta cheese
- 2 little gem lettuce
- 150 g Baby plum tomatoes
- 1/4 Small red onion
- 1/2 Small cucumber
- 10 Olives
- 5 Sundried tomatoes
- 2 tbsp fresh lemon juice (about 1 large lemon)
- Zest of 1 lemon
- 2 tbsp Red wine vinegar
- 2 Cloves Garlic, peeled and crushed
- 1 tbsp Granulated sugar
- 1 tsp Dried basil
- 1 tsp Dried Oregano
- 2 tbsp Extra virgin olive oil
Chop the feta cheese into bite-sized pieces.
Wash the lettuce, tomatoes and cucumber.
Finley chop the red onion and the lettuce.
Half the baby tomatoes and chop the cucumber into small pieces.
Line your salad bowl with the chopped lettuce and red onion.
Add all the other ingredients, olives, baby tomatoes, sundried tomatoes and herbs.
Drizzle the olive oil and the black pepper to complete your delicious salad
Serve immediately with some crusty gluten-free bread.
