Gluten-Free Fruit Scones Recipe

Fruit scones are one of my all-time favourite treats to make. They are quick and easy to make.

Equipment

Ingredients
 
 

  • 225 g Self-raising gluten-free flour (8 ounces)
  • 30 g Unsalted butter (1 ounce)
  • 60 g Castor sugar (2 ounces)
  • 60 g Saltarners (2 ounces)
  • 1 Egg
  • 150 ml Milk (5 fl oz)

Instructions
 

  • Rub the butter into the flour and baking powder until like breadcrumbs.
  • Beat an egg and add to milk.
  • Add the sugar and sultaners to the flour and mix gently. Next add the milk and egg to flour, and stir until the dough comes together.
  • Turn the dough out onto a floured surface and roll out to about 10 cm in thickness.
  • Cut out with round pastry cutters, add to a greased baking tray and brush tops with a little egg.
  • Cook for 12-15 minutes on gas 6 or 180-200c.
