Gluten-Free Fruit Scones Recipe

Fruit scones are one of my all-time favourite treats to make. They are quick and easy to make.

- 225 g Self-raising gluten-free flour (8 ounces)
- 30 g Unsalted butter (1 ounce)
- 60 g Castor sugar (2 ounces)
- 60 g Saltarners (2 ounces)
- 1 Egg
- 150 ml Milk (5 fl oz)
Rub the butter into the flour and baking powder until like breadcrumbs.
Beat an egg and add to milk.
Add the sugar and sultaners to the flour and mix gently. Next add the milk and egg to flour, and stir until the dough comes together.
Turn the dough out onto a floured surface and roll out to about 10 cm in thickness.
Cut out with round pastry cutters, add to a greased baking tray and brush tops with a little egg.
Cook for 12-15 minutes on gas 6 or 180-200c.
