What you’ll love about this recipe

A sausage traybake is the ultimate midweek culinary saviour that will revolutionise your dinner routine. Here are five compelling reasons why you’ll absolutely adore this glorious dish:

Minimal Washing Up: One of the most delightful aspects of a sausage traybake is its incredible simplicity. By using a single roasting tray, you’ll dramatically reduce your kitchen clean-up time, leaving you more moments to relax after a hearty meal. Simply pop everything onto a baking tray, let the oven work its magic, and bid farewell to mountains of dirty pots and pans.

Incredible Flavour Combinations: These traybakes are a playground for taste sensations. Whether you’re combining free-range organic sausages with cannellini beans and Chinese five-spice, or creating a classic honey and mustard glaze with apples and onions, each bite promises a symphony of flavours that will tantalise your taste buds.

Dietary Flexibility: Gluten-free sausage traybakes are wonderfully adaptable. You can easily swap ingredients to suit various dietary requirements – vegetarian sausages, different vegetables, or even keto-friendly options are all possible. This versatility means everyone can enjoy a delicious meal tailored to their specific nutritional needs.

Budget-Friendly Comfort: Using simple, readily available ingredients from your local supermarket, these traybakes are incredibly economical. You can create a nutritious, satisfying meal without breaking the bank, making it perfect for families looking to enjoy wholesome food on a budget.

Effortless Cooking: With typically only 15-20 minutes of preparation time and around 40 minutes in the oven, these traybakes are a godsend for busy home cooks. You’ll spend minimal time in the kitchen but emerge with a restaurant-quality meal that looks and tastes like you’ve been cooking all day. Simply chop, season, and let the oven do the hard work!

Ingredients

  • Gluten-free sausages (3 per person)
  • 2 small red onions, quartered
  • 1 small white onion
  • 1 red pepper, chopped and de-seeded
  • 1 yellow or orange pepper, chopped and de-seeded
  • Small baby new potatoes
  • 1 whole fennel bulb
  • 1 tbsp mixed-grain mustard
  • 1 garlic clove
  • 250 ml chicken stock (or cider)
  • Oil for cooking
  • Fresh parsley for serving

Instructions

  • Oven Preparation: Begin by preheating your oven to a toasty 200°C (Gas Mark 6). This ensures a perfect roasting environment for your delectable ingredients. Take a moment to select a large, sturdy oven-proof dish that will comfortably accommodate all your ingredients.
  • Initial Roasting Stage: Carefully arrange your gluten-free sausages and adorable baby new potatoes in the dish. Drizzle with a generous glug of olive oil, ensuring each morsel is lightly coated. Pop the dish into the preheated oven and allow to roast for a precise 15 minutes. This initial cooking will start to develop those beautiful golden-brown edges on your sausages.
  • Vegetable Preparation: While the sausages are roasting, turn your attention to the vegetables. Carefully quarter the red and white onions, creating rustic, chunky pieces. Deseed the red, yellow, and orange peppers, chopping them into appealing quarters. Tackle the fennel bulb with similar precision, creating chunky, roastable pieces that will caramelise beautifully in the oven.
  • Flavour Base Creation: In a small mixing bowl, combine the mixed grain mustard with a freshly crushed garlic clove. Add a splash of oil to create a fragrant, punchy mixture that will elevate the entire dish. This is where the magic of flavour begins!
  • Stock Preparation: Measure out 250 ml of chicken stock. If you’re feeling adventurous, you might substitute this with a crisp cider for an extra layer of flavour.
  • Final Roasting: After the initial 15-minute roast, carefully remove the dish from the oven. Artfully scatter your prepared vegetables around the sausages and potatoes. Drizzle the mustard-garlic mixture over everything, ensuring an even coating. Pour the chicken stock (or cider) around the ingredients, creating a delicious cooking liquid.
  • Extended Cooking: Return the dish to the oven and allow everything to roast together for 35-40 minutes. This is where the true alchemy happens – the vegetables will caramelise, the sausages will become perfectly bronzed, and the stock will reduce to create a magnificent sauce.
  • Finishing Touches: Once cooked to golden perfection, remove from the oven. Take a moment to appreciate the beautiful aromas. Sprinkle freshly chopped parsley over the top, adding a burst of colour and fresh flavour.
  • Serving: Bring the entire tray to the table – this is a rustic, family-style dish that invites everyone to dig in and enjoy the fruits of your culinary labour!
