Gluten Free Sausage Casserole Recipe

There is something so comforting about gluten free sausage casserole.

Sausage and mash was a childhood favorite of mine, this casserole is the grown-up version.

It is a one-pot recipe, reasonably cheap to make, and can be frozen. What more could you ask for?

Gluten free sausage casserole ingredients – what do you need?

  • 6 Gluten free sausages (I use grass-fed beef)
  • 4 large potatoes
  • 1 courgette cut into chunky battons
  • 1/2 red pepper and 1/2 yellow pepper cut into chunky strips
  • 1 large onion finely sliced
  • 2 garlic cloves (crushed)
  • 1 400g can of baked beans
  • 1 400g can of chopped tomatoes
  • 1 tablespoon of Italian herbs
  • 1 tablespoon of tomato puree
  • I gluten free vegetable stock cube

Gluten free sausage casserole instructions – what do you do?

  1. Heat the oven to 200c (Gas 6)
  2. Brown off the sausages in a pan turning regularly until slightly brown. Place into a large oven-proof dish
  3. Peel and chop the potatoes into bite-sized pieces, and add to the pot
  4. chop the peppers and onion and add to the pot
  5. Add all the remaining ingredients, crushed garlic, can of beans, tomatoes, herbs, tomato puree, and stock cube
  6. Cook for an hour at 200c (Gas 6), or until the potatoes are soft
  7. Serve with warm gluten free bread
