While the sweet potato is cooking, let’s start on the curry. Fry the beef on medium heat for about 8 minutes or until it’s nicely browned.

Add the chopped onion and red pepper to the beef. Keep frying for another 5 minutes to let the flavours mingle.

Now for the saucy bit! Add the tinned tomatoes, tomato puree, curry paste, and boiling water. Give it all a good stir. Let it simmer for about 20 minutes, stirring occasionally. Your kitchen will start smelling amazing!

Just before you’re ready to serve, add the cooked sweet potato to the curry. This keeps the sweet potato from getting too mushy.

  • 2 tbsp Curry paste ( I use Patak's Rogan Josh)
  • 300 ml Boiling water

Instructions
 

  • Cut the beef and the red pepper into bite-sized pieces. Finely chop the onion. Peel and chop the sweet potato into bite-sized pieces.
  • Put the sweet potato into a saucepan of boiling water and cook until soft. This takes about 10 minutes.
  • Fry the beef on medium heat for about 8 minutes or until browned.
  • Add the onion and red pepper and continue to fry for a further 5 minutes.
  • Add the tin of tomatoes, tomato puree, curry paste, and boiling water and stir thoroughly. Simmer for about 20 minutes stirring occasionally.
  • Add the sweet potato to the curry just before you serve.
  • Serve with rice or naan bread.
