Fresh Gluten-Free Salsa Recipe

Ingredients
- 600g ripe tomatoes, finely chopped
- 1/2 small red onion, finely diced
- 1 jalapeño pepper, seeded and minced (adjust to taste)
- 2 cloves of garlic, minced
- Juice of 1 lime
- 1/4 cup fresh coriander, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: 1/2 ripe avocado, diced
Instructions
- Start by washing all your fresh produce thoroughly. This is especially important for the tomatoes and coriander to remove any dirt or residue.
- Finely chop the tomatoes, ensuring they’re cut into small, uniform pieces. The key to a great salsa texture is consistency in your chopping. Place the chopped tomatoes in a medium-sized mixing bowl.
- Peel and finely dice the red onion. Add it to the bowl with the tomatoes. The red onion adds a lovely purple hue and a sharp flavour that complements the sweetness of the tomatoes.
- Carefully cut the jalapeño pepper in half and remove the seeds. If you prefer a spicier salsa, you can leave some seeds in. Mince the jalapeño finely and add it to the bowl. Remember to wash your hands thoroughly after handling the pepper!
- Peel and mince the garlic cloves. Add them to the bowl, giving your salsa a delicious aromatic boost.
- Cut the lime in half and squeeze its juice directly into the bowl. The lime juice not only adds a zesty flavour but also helps to keep the salsa fresh.
- Chop the fresh coriander and add it to the mixture. If you’re not a fan of coriander, you can substitute it with fresh parsley or omit it altogether.

Ingredients
- 600 g Fresh Tomatoes De-seeded and finely chopped
- 1 Large Green Chilli De-seeded and finely chopped.
- 1/2 Small Red Onion Finely chopped.
- 1 Garlic Clove Finely chopped
- 2 tbsp Fresh Corriander (cilantro) Finely chopped
- 1 tbsp Fresh Lime Juice
- 1/2 tsp Salt
Instructions
- De-seed and finely chop the tomatoes and green chilli.
- Finely chop the red onion and crush the garlic, add to the tomato.
- Finely chop the coriander and add to the bowl.
- Squeeze the lime juice and add to the bowl. Add a pinch of salt.
- Stir all the ingredients together and serve with tortilla crisps or pitta bread.
