  • 2 tbsp Sunflower oil
  • 8 Sausages (ensure they’re gluten-free)
  • 150g Plain gluten-free flour
  • Pinch of salt
  • 3 Eggs
  • 200ml Semi-skimmed milk
  • 50ml Water

Instructions

  1. Start by preheating your oven to a toasty 220°C (425°F). While it’s heating up, grab your 8-inch square tin and add the sunflower oil and sausages. Give everything a good roll around to ensure the sausages are nicely coated in oil.
  2. Pop the tin into the hot oven and let it cook for about 10 minutes. We’re aiming for the sausages to get a bit of colour, but don’t worry if they’re not fully cooked – they’ll finish cooking in the batter later.
  3. While the sausages are browning, let’s prepare our batter. In a mixing bowl, whisk together the gluten-free flour and a pinch of salt. Crack in the eggs and whisk vigorously until you’ve got a smooth, thick paste. Don’t worry if it looks a bit gloopy at this stage – that’s perfectly normal!
  4. Now, gradually add about a third of the milk to your flour mixture, whisking constantly to avoid any lumps. Once it’s smooth, pour in the rest of the milk and the water. Keep whisking until your batter is silky smooth and lump-free.
  5. After 10 minutes, carefully remove the hot tin with the sausages from the oven. Working quickly (but carefully!), pour your batter around the sausages. Listen for that satisfying sizzle!
  6. Return the tin to the oven, but reduce the temperature to 200°C (390°F). Now, here’s the tricky bit – resist the urge to open the oven door for at least 25 minutes. I know it’s tempting, but opening the door too soon can make your batter sink, and we want it nice and puffy!
  7. After about 30 minutes, or when your Toad in the Hole is gloriously puffed up and golden brown, it’s ready to come out. The batter should be crispy on the outside and slightly soft in the middle.

Equipment

  • 2 tbsp Sunflower oil
  • 8 Sausages
  • 150 g Plain gluten-free flour
  • Pinch of salt
  • 3 Eggs
  • 200 ml Semi-skimmed milk
  • 50 ml Water

Instructions
 

  • Heat oven to 220c.
  • Add the oil and sausages into the 8-inch square tin.
  • Coat everything with the sunflower oil.
  • Place the 8-inch square tin into the oven and cook for ten minutes, to slightly brown sausages.
  • Whisk the flour and salt with the eggs in the mixing bowl until you have a smooth and thick paste.
  • Add a third of the milk into the mixing bowl, and whisk until smooth. Add the remainder of the milk and 50ml of water until the batter is completely smooth.
  • Remove the sausages from the oven and pour the batter around them. Return the sausages to the oven.
  • Reduce the oven temperature to 200c and cook for 30 minutes. DO NOT OPEN THE OVEN, until at least 25 minutes have passed (as your batter will sink).
  • Once crisp and golden, serve immediately with mashed potatoes and green vegetables.
