 Ingredients

  • 2 tablespoons of golden syrup: This adds sweetness and moisture to the cake.
  • 55 grams of butter: Use unsalted butter for the best flavour.
  • 1 bar of gluten-free cooking chocolate: Choose your favourite brand; dark chocolate works wonderfully.
  • 1/2 packet of gluten-free digestives: These provide a crunchy texture and base for the cake.
  • 1/2 packet of gluten-free ginger biscuits: These add a lovely spiced flavour that complements the chocolate.
  • Melted white chocolate: For drizzling on top as decoration.
  • Fresh strawberries: These are perfect for garnishing and adding a fresh touch to your cake.

Instructions

  • Crush the Biscuits: Begin by placing the gluten-free digestives and ginger biscuits into a large bowl. Using a rolling pin or food processor, crush them into small pieces until they resemble coarse crumbs. This will form the base of your cake.
  • Melt Chocolate and Butter: In a heatproof bowl over simmering water (a bain-marie), melt together the butter and gluten-free cooking chocolate. Stir occasionally until everything is smooth and fully combined.
  • Add Golden Syrup: Once the chocolate and butter mixture is melted, remove it from heat and stir in the golden syrup. This will add sweetness and help bind everything together.
  • Combine Mixtures: Pour the melted chocolate mixture over the crushed biscuits in the bowl. Mix thoroughly until all biscuit pieces are coated in the chocolate mixture.
  • Press into Cake Tin: Line a 7-inch round cake tin with parchment paper for easy removal later. Transfer the biscuit-chocolate mixture into the tin and press it down firmly using the back of a spoon or your hands to create an even layer.
  • Refrigerate Place the cake tin in the refrigerator for about an hour, allowing it to set firmly.
  • Decorate: Once set, remove the cake from the tin and drizzle melted white chocolate over the top for decoration. Add fresh strawberries on top to enhance the appearance and flavour.

What to serve with gluten-free Easter cake

  • Single Cream: A drizzle of single cream adds richness and complements the chocolate perfectly.
  • Fresh Berries: Serve alongside additional fresh berries like raspberries or blueberries for a burst of flavour.
  • A Scoop of Vanilla Ice Cream: The creamy texture of vanilla ice cream pairs beautifully with the rich chocolate cake.
  • A Dusting of Powdered Sugar: For an elegant touch, sprinkle some powdered sugar on top before serving.
  • A Side of Hot Tea or Coffee: Offering hot beverages like tea or coffee can enhance your dessert experience, making it cosy and inviting.

With these suggestions in mind, you’re all set to enjoy this scrumptious gluten-free Easter cake! Happy baking! 🍰
