This dish is a grown-up version of the classic sausage and mash we all loved as kids.

It’s hearty, comforting, and perfect for those chilly evenings when you need a warm hug in a bowl.

I remember coming home after being out playing with my friends on a crisp Winters day to Mum cooking this lovely sausage casserole. It is also a festive favourite, and we would often have it over the Christmas period.

Plus, it’s budget-friendly and freezer-friendly too. What’s not to love?

Ingredients

  • 6 gluten-free pork sausages (I also love turkey sausage)
  • 1 large onion, finely sliced
  • 2 cloves of garlic, crushed
  • 2 peppers (1 red, 1 yellow), cut into chunky strips
  • 2 carrots, peeled and chopped
  • 1 courgette, cut into chunky batons
  • 400g tin of chopped tomatoes
  • 400g tin of baked beans
  • 200ml red wine (optional)
  • 1 gluten-free beef stock cube or pot
  • 2 tbsp tomato puree
  • 1 tsp dried sage
  • 1 tbsp Italian herbs
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

Preheat your oven to 180°C (160°C fan) or Gas Mark.

Heat a tablespoon of olive oil in a large, ovenproof casserole dish over medium-high heat. Add the gluten-free sausages and brown them on all sides. This should take about 5-7 minutes.

Once browned, remove the sausages from the dish and set aside. Don’t worry if they’re not fully cooked through, as they’ll finish cooking in the oven.

In the same dish, add another tablespoon of oil if needed. Toss in the sliced onions and crushed garlic. Sauté for about 5 minutes until the onions start to soften.

Add the chopped peppers, carrots, and courgette to the dish. Cook for another 5 minutes, stirring occasionally with a spatula.

Pour in the red wine (if using) and let it simmer for a couple of minutes to reduce slightly.

Add the chopped tomatoes, baked beans, tomato puree, and crumble in the gluten-free stock cube. Give everything a good stir.

Sprinkle in the dried sage and Italian herbs. Season with salt and pepper to taste.

Return the sausages to the baking dish, nestling them into the sauce.

Bring the mixture to a gentle simmer, then cover the dish with a lid or foil.

Transfer the casserole to the preheated oven and bake for about 1 hour to 1 hour. The sausages should be cooked thoroughly, and the vegetables should be tender.

About 15 minutes before the end of cooking time, remove the lid or foil to allow the sauce to thicken slightly.

Once done, take the casserole out of the oven and let it rest for 5-10 minutes before serving.

Ingredients
 
 

  • 6 Gluten free sausages (I use grass-fed beef)
  • 4 Large potatoes
  • 1 Courgette cut into chunky battons
  • 1/2 Red pepper (Cut into chunky strips)
  • 1/2 Yellow pepper (Cut into chunky strips)
  • 1 Large onion finely sliced
  • 2 Garlic cloves (Crushed)
  • 400 g Can of baked beans
  • 400 g Can of chopped tomatoes
  • 1 tbsp Italian herbs
  • 1 tsp Sage
  • 1 tbsp Tomato puree
  • 1 Gluten free vegetable stock cube
  • 200 ml Red wine ( optional)

Instructions
 

  • Preheat the oven to 160 C fan).
  • Brown off the sausages in a pan turning regularly until slightly brown. This takes about 5-7 minutes. Once the sausages are browned remove form the pan and set aside.
  • Now fry the chopped onions and crushed garlic. Saute for about five minutes.
  • Add the chopped peppers, carrots, and courgette. Cook for a further five minutes.
  • Pour in the wine if using.
  • Add the chopped tomatoes, baked beans, and tomato puree, and crumble in the gluten-free stock cube. Give everything a good stir.
  • Sprinkle in the herbs and season with salt and pepper.
  • Transfer everything to a baking dish.
  • Cook for an hour at 180c (Gas 6), or until the potatoes are soft.
  • Serve with warm gluten free bread.
