  • 2-3 Courgettes grated
  • 1 Large onion
  • 3 Rashers of bacon
  • 125 g Grated cheddar cheese (4.5 ounces)
  • 125 g Gluten-free flour (4.5 ounces)
  • 50 ml Rapeseed oil (2 fl oz)
  • 4 Medium eggs
  • 1 tsp Italian herbs
  • 1 Pinch of salt and pepper

Instructions
 

  • Grate the courgettes and put them into a large mixing bowl.
  • Grate or finely chop the onion and add to the courgettes.
  • Chop up the bacon and add it to the mixture.
  • Add in the grated cheese, flour, herbs, salt, and pepper.
  • Beat the eggs together with the oil and mix well with the dry ingredients.
  • Put the mixture into a well-greased flan tray.
  • Bake for 40-45 minutes on gas 6 or 200c.
