Ingredients
For the dough:
- 250ml semi-skimmed milk (with around 1.5% fat)
- 7g sachet of dried yeast
- 2 and a half teaspoons of sugar
- 1 teaspoon fine sea salt
- 1 large egg
- 400g gluten-free bread flour
- 1 teaspoon xanthan gum
- olive oil
- 2 teaspoons cider vinegar
- 1/2 teaspoon bicarbonate of soda
For the topping:
- 1 clove of garlic
- 400g of tomatoes
- sea salt and black pepper
- 2 x 125g balls of buffalo mozzarella
- fresh basil
Instructions
First, heat up the milk over low heat until it’s mildly warm, then set aside 50 ml of it, add the yeast and sugar, and mix it all up. Wait for a few minutes until it starts to bubble.
Then, you’re going to preheat the oven to 220°C/425°F. Heat up a pizza stone or a baking tray in the oven.
While the oven is heating up, place the flour, salt and xanthan gum into a large bowl, mix it up and then make a small well in the middle (these are your hard ingredients). In a separate bowl, combine the egg, 3 tablespoons of olive oil and the remaining milk (these are your soft ingredients for the dough), then pour it all into the well you made. Add the yeast mixture here as well. Mix it up together slowly with a mixer until it forms a dough. The texture should be smooth.
Combine the bicarbonate of soda and vinegar, then add this to the mixture. Place the dough into a slightly oiled bowl, cover it with plastic wrap, then leave in a warm place for 1-2 hours.
While you wait, you can make the topping. Chop up some basil stalks and peel and chop your garlic. Heat a splash of olive oil in a large frying pan over a medium heat, then add the basil stalks and garlic. Let this cook for a few minutes. Then, pour in the tinned tomatoes, break them up, and let this cook until thickened (it takes 5-10 minutes). Put it all in a blender with half of the reserved basil leaves, blitz until it’s smooth, then add sea salt and black pepper. Now you have made your very own, home-made tomato sauce.
Once your dough has doubled in size, divide it into four pieces (on a floured pizza peel or your countertop). Stitch it out from the center until it’s roughly 30cm in diameter and 2mm thick. In batches, place the pizza bases onto the preheated baking tray, then spread over the tomato sauce. Remember to leave a rough 2cm gap around the edge for the crust.
Put the mozzarella on top (and anything else you want on top), then pop the pizza in the hot oven for 10 to 12 minutes or until golden. Spread the leftover basil leaves on top, then it’s ready to serve. Enjoy.

For the batter:
- 1 cup of gluten-free flour
- 1 cup of milk
- 1 and a half teaspoons baking powder
- a half of a teaspoon of salt
- 1 cup granulated sugar
- 1/2 cup of melted butter
For the strawberry mixture:
- 4 cups of hulled, halved strawberries
- 2 teaspoons cornstarch
- 2 teaspoons lemon juice
- a half cup of sugar
Instructions
- Preheat your oven to 350°F/175°C
- Melt the butter
- Put the flour, baking powder, and salt together and mix
- Add the milk to your dry mix and then slowly whisk in the melted butter
- Pour your batter into a pie plate or any square casserole dish
- Next, prepare the strawberry mixture by chopping up your strawberries (leave a few whole) and mixing them with the sugar, cornstarch, and lemon juice (you can add vanilla extract)
- Place the strawberry mixture into the batter evenly and put a few whole strawberries on top
- Bake for around 55-60 minutes until it’s golden brown on top
- You can serve this dish with extra strawberries, whipped cream or vanilla ice cream. Enjoy!
