For the Stir Fry

  • 2 Chicken Breasts
  • 1 Medium Onion, thinly sliced
  • 1 Red Pepper, thinly sliced
  • 120g Canned Bamboo Shoots
  • 100g Green Beans
  • 200g Asparagus
  • Rapeseed oil for cooking
  • 200g Basmati Rice

For the Teriyaki Sauce

  • 100g Tamari (or 1/2 cup)
  • 200ml Water (or 1 cup)
  • 1 tbsp Fresh Ginger, grated (or 1 tsp ground ginger)
  • 1 tsp Fresh Garlic, crushed
  • 65g Dark Brown Sugar
  • 2 tbsp Honey
  • 1 tbsp Rice Vinegar
  • 1 tsp Sesame Oil
  • 1/2 tsp Red Chilli Flakes
  • 1 tbsp Corn Flour

Instructions

Preparing the Chicken
Start by cutting the chicken breasts into bite-size pieces using a sharp knife. Heat a large skillet with a little rapeseed oil over medium heat. Carefully place the chicken strips into the pan and fry them until they turn a golden brown colour. This should take approximately 8-10 minutes. Once cooked, remove the chicken from the pan and set aside on a clean plate.

Preparing the Vegetables
Thinly slice the onion and red pepper using your chopping board and knife. For the green beans, top and tail them by removing the tough ends. Similarly, prepare the asparagus by cutting off the hard woody ends. Having your vegetables uniformly cut ensures even cooking and an attractive presentation.

Making the Teriyaki Sauce
In a saucepan, combine all the gluten-free teriyaki sauce ingredients. Use a hand whisk to blend everything thoroughly, ensuring no lumps remain. Place the saucepan over medium heat and stir constantly. Allow the sauce to simmer and gradually thicken. Once it reaches a nice, glossy consistency, remove from heat and set aside.

Cooking the Rice

In the original frying pan, add a little more rapeseed oil.  On medium-high heat sauté the sliced onions for five minutes until they become translucent. Next, add the red pepper and continue cooking for another 10 minutes. Then introduce the cooked chicken and bamboo shoots, frying for an additional 5 minutes.

Combining and Finishing
Pour the prepared teriyaki sauce over the stir-fried ingredients. Gently stir to ensure everything is well-coated with the sauce. Continue cooking for another 5 minutes, allowing the flavours to meld together.

  • To make the Teriyaki sauce, whisk all the ingredients together in a saucepan.
  • Heat the sauce over medium heat until it is simmering. Stir constantly.
  • Reduce the heat to low until it becomes thick. Put to one side once ready.
  • Fill a large saucepan with 500ml of boiling water. Put the rice into the water a boil until cooked this should take about 10-12 minutes.
  • Fry the onion in a little rapeseed oil for five minutes, then add the red pepper and fry for 10 minutes.
  • Add in the chicken and bamboo slices fry for 5 minutes.
  • Add in the Teriyaki sauce and coat everything well. Fry for 5 minutes.
  • In a saucepan add some boiling water and put the green beans and asparagus into the water and cook for around 4-6 minutes until they are soft.
  • Once everything is cooked serve and enjoy.
