  • 2-3 large Bramley cooking apples
  • Zest of 1 orange

  • 700ml whole milk
  • 4 large egg yolks
  • 3 tbsp cornflour
  • 80g caster sugar
  • 1 tsp vanilla extract

  • Preheat your oven to 180°C (160°C fan) or Gas 4. This temperature ensures the crumble topping will bake evenly and achieve a perfect golden-brown colour.
  • Start by making the crumble topping: sieve the gluten-free plain flour into a large mixing bowl and rub in the cold, cubed butter using your fingertips until the mixture resembles fine breadcrumbs. This process incorporates air, resulting in a lighter, crumblier topping.

  • Gradually pour the hot milk and cream mixture into the egg mixture, whisking constantly to prevent the eggs from curdling. Ingredients
  

  • 150 g Gluten-free plain flour

For the custard

  • 200 ml Double cream
  • 700 ml Whole milk
  • 4 Large egg yolks
  • 3 tbsp Cornflour
  • 80 g Caster sugar
  • 1 tsp Vanilla extract

Instructions
 

  • Heat your oven to 180℃ (160℃ fan) or Gas 4.
  • Sieve the flour into a bowl and rub in the butter until it resembles breadcrumbs. Stir in the sugar and coconut.
  • Spread the crumble mix onto a baking tray and cook in the oven for 15 minutes or until the crumble is brown.
  • Place the peeled and chopped apples into a saucepan with the rest of the sugar, orange zest, and 2 tbsp of cold water.
  • Cover the saucepan and cook for around 10 minutes until soft.

Making your custard

  • Put the milk and cream in a pan and gently heat to just below boiling point.
  • In a separate bowl, whisk egg yokes, cornflour, sugar, and vanilla.
  • Gradually pour the hot milk into the sugar mixture stirring constantly.
  • Pour the mixture back into the saucepan and heat gently until it is thick, stirring out any lumps. Allow to cool.
  • Construct your dessert pots. Start by placing the cooked fruit at the bottom of the glass, then add a layer of custard, and finally the crumble topping.
