It’s great if it’s a meal, (if it’s in the cupboard it’s going in) just add your leftovers or items you need to use up and away you go.

Gluten Free Fish Risotto recipe

Are you ready to try my gluten-free fish Risotto recipe? Then let’s get started:

Ingredients – What do you need?

  • 2 x 100g  fresh fish  fillets (I used smoked cod)
  • 200 g (70z) Italian arborio risotto rice
  • Small knob butter
  • 550 ml (1 pint) of fish stock
  • 200 ml  small glass of white wine (optional)
  • 1 large onion finely chopped
  • 1 garlic clove finely chopped
  • 1 Teaspoon Italian herbs
  • 100 g (3.5oz) fresh or frozen peas
  • 100g (3.5oz) fresh or frozen spinach
  • parsley and parmesan cheese to serve- (serves 2)

Instructions – What do you do?

  1. Cook the fish ( use the manufacturer’s instructions).
  2. Finely chop an onion and garlic clove, then fry for around 3 minutes in 1 tablespoon of rapeseed oil. Do not burn.
  3. Next, add a knob of butter and the rice. Make sure you coat all the rice with the butter. If using you can add the wine now.
  4. Add a ladle of the hot stock and stir. When the risotto absorbs all the liquid, you add another ladle of stock until the risotto is cooked.
  5. Keep stirring the risotto so the rice is evenly cooked and to stop it from burning. The risotto is cooked when the rice is tender but firm to the bite.
  6. Add in the frozen peas, spinach, and herbs while you are still adding the stock.
  7. Once the rice is cooked crumble in the cooked fish and stir through.
  8. Serve with parsley and parmesan.

Gluten-Free Fish Risotto tips

Here are some tips to help you make the most out of this recipe:

Check the Fish

Ensure the fish you’re using is fresh and hasn’t been processed with any gluten-containing additives. If using canned fish, check the label to confirm it’s gluten-free.

Avoid Cross-Contamination

If you’re preparing the fish risotto in a kitchen that is not entirely gluten-free, take precautions to avoid cross-contamination. Use separate utensils, cutting boards, and cooking surfaces to prevent gluten from coming into contact with the ingredients.
