Ingredients

Fish: You’ll need 200g of fresh fish fillets. The recipe suggests cod, but feel free to use your favourite fish.

Oil: Two teaspoons of rapeseed oil will help you stir-fry those veggies to perfection.

Aromatics: One garlic clove and half a red onion, finely chopped, will add a lovely depth of flavour.

Heat: Half a red chilli, finely chopped, brings a nice kick to the dish.

Vegetables: You’ll need half a red pepper, half a yellow pepper, a handful of spinach, and one large carrot cut into thin batons.

Sauce: For the stir-fry sauce, you’ll need a 400g tin of tomatoes, a tablespoon of sweet chilli sauce, and optionally, a large pinch of dried chilli flakes for extra heat.

Instructions

Start by cooking your fish according to the package instructions. You can bake, fry, or poach it – whatever you prefer!

While the fish is cooking, prep all your veggies. Chop, slice, and dice everything so it’s ready to go.

If you’re serving your stir-fry with rice or noodles, get the water boiling now and cook them as per the instructions.

Now for the fun part! Heat your rapeseed oil in a pan and start by frying the red onion, chilli, and garlic for about 5 minutes. Be careful not to let them burn.

Add the carrot batons next and fry for another 5 minutes.

Toss in the rest of your veggies – the peppers and spinach – and fry for 5 more minutes.

Time for the sauce! Add the tinned tomatoes, sweet chilli sauce, and chilli flakes if you’re using them.

Keep frying until all the veggies are cooked to your liking. I personally like my carrots with a bit of crunch!

Finally, serve up your colourful stir-fry with the cooked fish and your choice of rice or noodles. Don’t forget to sprinkle some fresh parsley on top for that final flourish!

Ingredients
 
 

  • 200 g Fillets of fresh fish (3.5 oz, I used Cod)
  • 2 tsp Rapeseed oil
  • 1 Garlic clove
  • 1/2 Red onion finely chopped
  • 1/2 Red chilli finely chopped
  • 1/2 Red pepper finely chopped
  • 1/2 Yellow pepper finely chopped
  • A handful of spinach
  • 1 Large carrot thinly sliced into batons
  • Parsley to serve

Ingredients for the Stir-try Sauce

  • 400 g Tin tomatoes
  • 1 tbsp Sweet chilli sauce
  • A large pinch of dried chili flakes (optional)

Instructions
 

  • Bake your fish (follow the manufacturer's instructions) as some can be oven-baked, fried, or poached.
  • Prepare all of the vegetables.
  • Boil the water for rice or noodles (follow the manufacturer's instructions).
  • Stir fry the vegetables in a pan with the rapeseed oil. Starting with the red onion, red chilli, and garlic clove, fry them for about 5 minutes do not allow to burn.
  • Add the carrots and fry for a further 5 minutes.
  • Now add the remaining vegetables, red and yellow pepper, and spinach, and fry for a further 5 minutes.
  • Add the tin of tomatoes, chilli sauce, and chilli flakes (if using) to the vegetables.
  • Fry until vegetables are fully cooked (I like my carrots a bit firm).
  • Serve the vegetables, fish and rice in two bowls, sprinkle with parsley, and enjoy!
