Gluten Free Apple Cake Recipe

This gluten free Apple Cake recipe is great for using up a glut of apples. It is delicious, very easy to put together and it freezes well.

I often turn it into a dessert with custard or icecream.

Gluten Free Apple Cake

Are you ready to try my gluten free Apple cake recipe? Then let’s get started:

Ingredients – What do you need?

  • 125g (4oz) melted butter
  • 100g (3.5oz) Brown sugar
  • 2 medium eggs
  • 300g  cooking apple peeled and chopped
  • 225g (8oz) gluten free self-raising flour
  • 1/2 teaspoon gluten free baking powder
  • 2 level teaspoons ground cinnamon
  • 100g (3.50oz) Sultanans
  • A splash of milk if mixture is dry

Instructions – What do you do?

  1. Preheat oven to 180 (gas 4). Well, grease a 1kg (2lb) loaf tin.
  2. Peel and chop the apples. Place in a sauce pan and cook down in a little water until soft. Leave to cool.
  3. Melt the butter in a bowl over a pan of boiling water.
  4. Mix in brown sugar it should look a bit like the consistency of wet sand.
  5. Add beaten eggs one at a time and mix in well.
  6. Add the remaining ingredients; cooked apples, flour, baking powder, spices, sultanas.
  7. Pour the mixture into the prepared loaf tin.
  8. Bake in the oven for 45-50 minutes until golden brown.
  9. To check if it is cooked through pop a skewer inside if it comes out clean it is fully cooked (if it isn’t fully cooked keep cooking and checking in 5-minute intervals until done).
  10. Allow to cool for a few minutes and then remove from the tin and onto a wire rack to fully cool.
  11. Serve with a little butter, custard, or on its own, delicious.
